Buying saffron online takes more trust than the market has earned. Fake threads are dyed, weak saffron is boosted with color, and every seller claims theirs is the real thing. So we removed the trust part. Every vial of our Mongra carries a batch code, and that code opens the lab report for the exact lot in your hand.

Mongra is the top grade of Kashmiri saffron. The red stigma is cut free of the pale style, so you pay for pure thread, not filler. This lot was hand-picked on the karewa fields of Pampore, dried in shade to protect the aroma, then graded by hand and tested for crocin, safranal and picrocrocin, the three numbers the international standard uses to grade every saffron on earth.

Two grams goes further than you think. Used properly, it covers a winter of kahwa, several biryanis and a few desserts. A little of the real thing beats a lot of the fake.

How to use it

Steep a pinch in two tablespoons of warm milk or water for twenty minutes, then add the liquid and the threads together. That one step pulls more color and flavor from ten threads than scattering thirty dry ones ever will. Keep it out of hot oil, and don’t grind it dry unless a recipe asks for it.

Storage

Keep the vial closed, away from light and heat. Saffron doesn’t spoil, it fades, and it fades before the threads look any different. A dark cupboard keeps this vial potent to the last pinch.

How to tell real saffron from the rest

Rub a thread between wet fingers and real saffron stains yellow, not red. Dropped into cold water it releases colour slowly over several minutes; a dye lets go almost at once. Neither test is conclusive on its own, which is why every batch we sell carries a lab report you can read.
