You can follow a rogan josh recipe exactly and still miss the taste of the one you had in Kashmir. The missing piece is usually ver.

Ver is a sun-dried cake of ground spices, garlic and shallots that Kashmiri households prepare by hand and dry in the autumn sun. It is the base note of Wazwan cooking, the thing recipes abroad replace with a long list of substitutes that never quite land. Ours is made the traditional way in small batches, no shortcuts and no preservatives.

Crumble a little in, and the dish finds its accent.

How to use it

Crumble a small piece into rogan josh, matschgand, rajma or haakh while the oil is hot. Start with less than you think, ver is concentrated.

How to tell real saffron from the rest

Rub a thread between wet fingers and real saffron stains yellow, not red. Dropped into cold water it releases colour slowly over several minutes; a dye lets go almost at once. Neither test is conclusive on its own, which is why every batch we sell carries a lab report you can read.
