An uncomfortable fact about honey: most of what’s sold in a squeezy bottle has been heated and pressure-filtered so it never sets on a shop shelf. That same processing strips out the enzymes and aromatics that made it honey rather than syrup. Ours skips all of it.
This jar is gathered from hives worked across wildflower meadows in Budgam, strained through mesh to remove wax and bee parts, and bottled. That’s the entire process. Because it’s multifloral, the flavor shifts a little between harvests instead of being standardized to a house profile. That’s not inconsistency. That’s the meadow.
It will set solid
Raw honey crystallises, usually within a few months and faster in a cold kitchen. That’s evidence it hasn’t been heat-treated, not a fault. Stand the jar in warm water for a few minutes to loosen it. Never microwave it.
Not for infants
Raw honey must not be given to children under twelve months.
