Most walnuts on Indian shelves are bleached. It makes dark, uneven kernels look uniform, and it leaves a faint chemical edge you can taste on the finish. We don’t do it. What’s in this pouch is what a walnut looks like when nobody has interfered with it.
Kashmiri walnuts grow on rain-fed trees, largely without irrigation or chemical input. The kernels run smaller than the Californian ones in supermarkets and taste of considerably more: sweeter, oilier, without the tannic bite that makes ordinary walnuts bitter. These are light halves, hand-sorted and packed within days of shelling.
Storage
Walnuts are nearly two-thirds oil, and oil goes rancid at room temperature within a few months. Once the pouch is open, keep it sealed in the fridge and the kernels will stay sweet through the full best-before period.
