Quick test for the dried apricots you have at home: are they bright orange? That color comes from sulphur dioxide, not from the fruit. Untreated apricots dry brown. Ours are brown, and that’s the whole point.
These are dried whole in open mountain air, stones in, and sold as they come off the racks. Nothing added, nothing stripped away. The flavor is deeper and less uniformly sweet than the treated kind, and the texture is chewier, closer to fruit than to candy.
A note on the stones
The stones stay in because the fruit keeps better that way. Crack one open and the kernel inside is edible and faintly bitter. Many Kashmiris consider it the best part; you can decide for yourself.
